You will need:

  1. 220g self raising flour

  2. Pinch salt

  3. 50g caster sugar

  4. 2 Free-range eggs

  5. 280ml milk

  6. 1 1/2 tsp baking powder

Method:

  1. 1. Sift the flour, salt, sugar and baking powder into a large bowl.
    2. Whisk the milk and eggs together in a separate bowl then gradually mix them into the dry ingredients.
    3. Grease your frying pan with a little oil on a medium heat.  Once hot, spoon a small amount of the batter into the pan (using 3 tablespoons for each will make approx 8 pancakes) 
    4. Once bubbles have started to form on the top, your pancakes are ready to flip. Using a spatula, flip the pancakes and cook the other side for around a minute or until golden brown.
