- Why We Love It:
- Sheltered by the Andes, the stable climate of the Meseta De Popayán region in Cauca, Colombia shapes the rich character that makes this coffee stand out
- Honey roast peanut, pear drop and melon notes interweave in this outstanding coffee decaffeinated using an extract of sugarcane
- The sugarcane decaf process uses ethyl acetate (EA), a naturally occurring compound derived from molasses (a byproduct of sugar production) - this method is labelled as “naturally decaffeinated”
- The beans are soaked in water, then EA gets to work, binding with and pulling out the caffeine while leaving the good stuff intact
- Once the caffeine’s gone, any leftover EA is steamed off, leaving you with a decaf that holds onto its flavour
- Sourced through Cofinet, a family business with over 80 years in coffee, they’re committed to actively building a better future for farmers
