We are seeking an experienced Development Chef to lead our butchery and fresh food production operations. The role involves managing staff, maintaining quality and hygiene standards, overseeing production processes, and driving profitability through excellent customer service, waste control, and inspirational seasonal merchandising. You’ll also ensure that all meat for our restaurant menus is sourced with provenance, seasonality and best value.
This person will be responsible for the smooth running of the butchery and food production team and accountable for delivering high standards across retail and restaurant supply. You’ll also lead merchandising of chillers and counters, develop seasonal product ranges, and support collaboration across departments.
General duties/key responsibilities include:
• Oversee daily operations of butchery and food production
• Plan and monitor production schedules to meet demand
• Ensure compliance with food safety and health & safety regulations
• Maintain stock levels and minimise waste
• Develop ready-to-eat lines and signature dishes
• Manage batch cooking for retail and restaurant supply
• Create inspiring seasonal displays and self-serve chillers
• Recruit, train and develop the team
• Monitor sales and margins, taking action to meet targets
• Enforce food safety standards (HACCP, hygiene, labelling, traceability)
• Liaise with suppliers for quality and cost-effective purchasing
• Deliver outstanding customer service and product knowledge
• Support marketing with seasonal content and artisan storytelling
• Manage budgets and control costs
• Analyse data to improve efficiency and profitability
• Report on performance, wastage and stock levels
The successful candidate will have:
• Previous food development experience to management level
• Butchery knowledge (ideally Butchery Level 2 qualified)
• Food Hygiene Level 3 (or willingness to train)
• Retail sales and visual merchandising experience
• Passion for customer experience and seasonal food innovation
• Proven leadership and team management skills
• High standards and attention to detail
• Excellent IT and organisational skills
This is a full-time position averaging 37.5 hours per week, scheduled across five shifts within a seven-day period. Shifts may include early mornings, evenings, and weekends, with start and end times subject to seasonal variation.
The role is based at our Wychbold store, so you must live within a reasonable commuting distance.
