We are delighted to welcome Lap-fai Lee back to Webbs for 2026, Food at Webbs are excited to bring you our seasonal Low & Slow Barbecue Masterclass.

Webbs will once again be partnering with renowned Birmingham chef Lap-fai Lee to bring you the ultimate Low & Slow Masterclass. Low & Slow barbecue is an American classic. Originally a way to turn tough cuts into the most tender and delectable meats, the sweet and complex flavours of fire, woodsmoke and spice creates truly one of the greatest cuisines in the world. In this masterclass, Lap-fai will take the mystery out of low n slow bbq: starting from first principles, you will cook up an inspirational American BBQ feast together, using the very best charcoal kettles and pellet smokers from Weber and Traeger. All the meat is sourced from Webbs own master butchers for the complete experience. The perfect event for barbecue and foodie enthusiasts!


Participants will work in pairs to prepare and cook their food, enjoying everything they make during the session. If there is more than you wish to eat on the day, you are welcome to take any leftovers home with you. Lap-fai will also provide notes and recipes to take away, so you can recreate the experience at home.

The course covers:

  • Selection and preparation of meat cuts

  • Choices of fuel and woods for smoking
  • The use of rubs, marinades and mops
  • Barbecue set up
  • Correct cooking and resting.
     

The menu for the course: 

  • Smoked Lamb Barbacoa - meltingly tender Tex-Mex smoked lamb shoulder served with Pico de gallo and tortillas.

  • Beef short ribs - dark, peppery bark, meltingly tender and juicy beef ribs are simple and irresistible.

  • Hot Links - one of the real arts of barbecue is making your own smoked sausages, and hot links are some of the best. You’ll learn to make them from scratch: mincing, stuffing, linking, smoking and eating.

  • Lockhart Pork Chops - pork chops unlike any other, the same way they cook them in Lockhart, Texas. Includes trimming down a whole joint, making rubs and sauces, mopping and finishing. 

  • An assortment of classic and sides - skillet cornbread, slaw, sauce and rubs.

  • Throughout the day you will have refreshments on hand, whether it be tea, coffee or water. 


Chef profile:
Lap-fai Lee is a renowned Birmingham cook, tutor, food stylist, private cook and food teacher. He specialises in world cuisine, showcasing central and south American, south-east Asian and Oriental dishes to the food industry. When he's not cooking, his range of cookery classes varies from his Low & Slow Barbecue courses at London Barbecue School to seafood and charcuterie knife skill lessons. Lap has been running courses with Food at Webbs since 2019 and we are excited for him to return for 2025.
