SEARED MACKEREL 'POSH BEANS ON TOAST'


Ingredients

 250ml olive oil
 3 large fillets of mackerel or any oily fish
 2 onions, finely diced
 2tsp smoked paprika
 600ml passata
 800g cooked white beans
 Bunch of flat parsley, chopped
 6 pieces of sliced sourdough bread
 2 cloves of garlic
 Salt and pepper

Method

   1.      Sweat the chopped onions in a little of the olive oil.
   2.      Add the smoked paprika.
   3.      Add the passata.
   4.      Simmer gently for 15 minutes.
   5.      Stir in the beans and cook for a further 5 minutes.
   6.      Add the chopped parsley.
   7.      Toast the bread and rub with garlic for an optional dose of flavour.
   8.      Score the skin of the fish and gently season.
   9.      Grill gently, skin side up
   10.    Place beans and fish on top to make the perfect posh beans on toast!
