BAKED RHUBARB AND STRAWBERRY CRUMBLE 

  • Cut 3 - 4 trimmed rhubarb stems into 5cm (2in) lengths.
  • Place into a shallow dish and sprinkle with caster sugar.
  • Cover with foil and bake at 200°C for 15 mins, then add 250g of halved strawberries to the dish and cook for a further 5 mins.
  •  Spoon mixture into a larger dish, cover with a crumble mix, and bake for 25 mins until golden.
